Zucchini Cakes

A tasty and fast recipe that everyone can pull through!






INGREDIENTS 

2 grated zucchini
1 large egg
1 c. panko bread crumbs
1 chopped onionsalt, pepper and spices you like
1/2 c. grated Parmesan cheese

PREPARATION
  1. Remove excess liquid from freshly grated zucchini by placing them between paper towels and squeezing.
  2. In a large bowl, mix all the ingredients.
  3. Put on a large pan some oil (olive or oil of your choice), and heat the pan.
  4. Shape with a spoon the zucchini batter into small patties, and drop them into the sizzling pan.
  5.  Fry each side for about 3 minutes, or until the outside is golden brown and cooked through.
  6. Remove from the pan and drain on a paper towels.
Serve it!
