INGREDIENTS
2 grated zucchini
1 large egg
1 c. panko bread crumbs
1 chopped onionsalt, pepper and spices you like
1/2 c. grated Parmesan cheese
PREPARATION
- Remove excess liquid from freshly grated zucchini by placing them between paper towels and squeezing.
- In a large bowl, mix all the ingredients.
- Put on a large pan some oil (olive or oil of your choice), and heat the pan.
- Shape with a spoon the zucchini batter into small patties, and drop them into the sizzling pan.
- Fry each side for about 3 minutes, or until the outside is golden brown and cooked through.
- Remove from the pan and drain on a paper towels.
