The Perfect Italian Pizza!

INGREDIENTS:

  • 800 gr bread flour (yellow)
  • 100gr wholemeal flour
  • 100gr fine semolina
  • 700 ml water
  • 4 tbsp olive oil
  • 1 and 1/2 coarse salt
  • 1 tsp brown sugar
  • 1 packet yeast (8g)


PREPARATION:

  1. Mix the flour with the semolina, yeast and salt and sugar.
  2. Add the water and stir vigorously.
  3. After created the dough, add the oil.
  4. Continue kneading for about 15 minutes.
  5. The dough to be ready should be very flexible and soft, and slightly sticky on the hands.
  6. Leave the dough for 10 minutes to rest.
  7. Repeat the kneading for 2-3 minutes. Resting the dough for 10 minutes and repeating.
  8. In a greased large bowl add the dough and cover it well with foil.
  9. Put the dough in the refrigerator and leave it there for at least 24 hours (for a better taste and texture).
  10. The next day, just before making the pizza, remove from the refrigerator and divide the dough into 4 equal pieces.If you get stuck, add flour semolina. Not flour!
  11. Roll out one ball of dough in pan 32-36 cm with the tips of our finger. Make the edge of the dough thicker to prevent the sauce and our ingredients from poured.
  12. Cover the pan to rest the dough for 30 minutes before adding the sauce and our ingredients, and bake immediately in a hot oven (at higher temperature) in the down position, directly on the hot surface. If the oven is properly preheated and hot (250-270 degrees or more) each pizza will take about 12 minutes to get done.

  • When you put the sauce and the ingredients on the dough, you have to bake immediately the pizza! Otherwise the dough will be soaked!

  • Warm the oven with the pan iside it, the pan in which you will bake the pizza! It is important the dough to fall directly onto the hot surface of the hot oven.
